We have been going back and forth over what size system to get. A 3 barrel system is about as small as we could get by with and we had thought about starting as small as possible and growing when we had to. We knew we would eventually need a larger brewhouse but a 3 barrel system is so much cheaper and
easier to find. Recently, a couple things changed our thinking on this.

First, we poured at three beer festivals in the Las Vegas area and the response to our beer was incredible. We poured over 25 kegs of numerous styles including 3 different Bourbon Barrel Aged Imperial Stouts, Wee Heavy, Imperial IPA, New England IPA and Lagers from 5% to 16%. We also poured 6 beers on Nitro including a Golden Coffee Stouts and several Barrel Aged Beers. We had literally hundreds of people say our beers were their favorites of the festival. We know we like our beers and we have won numerous awards but it was amazing to see the responses when our beer was compared to commercial beers and so many coming back to our booth for more. There is definitely a market in Las Vegas for high alcohol and barrel aged beers that is currently untapped.

Second, after speaking to several craft beer professionals, we realized that, since we know we would need a larger system in the future, the time to do that is now. Replacing a small system with a larger system is far more expensive than just starting with the larger system. Also, replacing a system is disruptive and the recipes would have to be changed for the new system. We have decided to go all in and start with a 10 barrel system.

So, we purchased this 10 barrel 2 vessel brewhouse from SS Brewtech in California and it should be delivered in less than 6 weeks.
