After years in graduate school,\u0026nbsp;I gained a lot of weight and my health was failing. That led to the decision to take control of my health, cleanse my system, and get back on track. It led to the decision to change from a fast-food, meat-based diet\u0026nbsp;to a plant-based, vegan diet.​​The change\u0026nbsp;turned out to be more difficult than I realized. While searching for plant-based alternatives, \u0026nbsp;I had to go to multiple stores to find the products I wanted. On top of that, I ​spent an incredible amount of time reading product labels to make sure all the ingredients were plant-based. Doing this every week turned out to be a problem. I ​knew others were\u0026nbsp;experiencing the same challenges in finding quality vegan products in traditional\u0026nbsp;grocery stores.\u0026nbsp;The seed was planted. I\u0026nbsp;knew the solution: an all-vegan grocery store where customers would find a variety of products that were certified vegan, providing a sense of relief and comfort to vegans, vegetarians, and flexitarians. That was the birth of Vegan Fine Foods.\u0026nbsp;It was time to develop the plan.A Man With a Plan By early 2016 I had the first draft of a\u0026nbsp;business plan\u0026nbsp;but I needed to do more research. I wanted to study vegan markets that were already succeeding. I found out quickly that there weren't many to choose from. In the U.S., I went to Gary Null's Uptown Whole Foods in NYC and Food Fight in Portland, Oregon. Then I traveled to Europe to see Veganz in Berlin andVBites in London. I learned from all of them. Then I blended in what I ​learned at\u0026nbsp;traditional\u0026nbsp;specialty stores, such as Whole Foods and\u0026nbsp;Dean \u0026amp; Deluca, and completed the plan.The next step was to\u0026nbsp;find a special\u0026nbsp;location with lots of character. I\u0026nbsp;found the perfect retail\u0026nbsp;space in downtown Fort Lauderdale. The\u0026nbsp;buildout\u0026nbsp;took almost a year. Of course when we get a rush of customers at the same time, the wait time is longer, but we have fine-tuned our operations to the point where we getting food to customers in the cafe much faster. We will continue to improve in this area. Regarding your question about pricing, we do not have the buying power of Walmart of any of the national big box retail stores. Their wholesale prices are much lower than ours, which means they can price products in their stores much lower than we can. We try to carry unique, higher quality products that are not found in the big box retailers, but sometimes there is some overlap. As our sales continue to grow, we will be able to negotiate better pricing with our suppliers, which will allow us to pass on those savings to our customers. Lastly, the quality of the food served at Vegan Fine Foods is top notch, and most of our customers, based on the in-store feedback we receive, are very happy and satisfied with the food on our menu.
