Svöl Aquavit is an aquavit brand developed alongside some of the most famous Scandinavian food and drinks authority in the world. As part of Drifter’s focus on niche spirits beloved by the modern craft cocktail bartender, aquavit is a botanical spirit from Scandinavia, closely related to a gin, that uses caraway as a base botanical instead of juniper.

Gunnar Gislason, the owner head chef of Michelin starred Dill in Rekjavik, wanted to express the different national traditions of aquavit: Danish, Swedish and Norwegian. The Svöl Danish, with aromas of caraway, and Svöl Swedish, with aromas of dill, were launched in 2019 to acclaim. The products are produced in Brooklyn with the famous gin distiller Allen Katz at the New York Distilling Co.

The products were launched to acclaim, with a mention in the New York Times, as well as adoption at some of the best restaurants, bars and hotels in the world, such as the Nomad, Eleven Madison Park and Broken Shaker at the Freehand.

Moreover, they have provided strong initial cash flow that has supported Drifter’s growth trajectory on top of revenues of $153k in only 7 months.
