The past week at Element Farms has been an exciting one. Though it was absolutely freezing (and then pretty warm!) outside, our greenhouse was just right--the right temperature, the right humidity levels, and the right amount of light. Our baby spinach, baby kale, baby arugula, and more have been growing so perfectly that we suspect they don’t even know it’s winter.
