The benefit of this new model is that by offering customers the opportunity to purchase their custom recipes and the experience of participating in making the custom beer; the cost of the experience and service would cover the cost of labor and production. While, in the traditional brewing model, the cost of goods for beer production would be absorbed by the brewery for such things as the hops, malts, yeast, water, and other adjuncts added to the beers. These costs would be included in the price of the customized beers.\u0026nbsp; We would produce 12 beers regularly, 3 taps would be regular beers including IPA, Stout, and Kolsch styles. The remaining taps would be filled with customized beers and collaboration beers with other breweries.Examples of customized beers may include: A couple getting married enjoy flowers and cherries and want a beer that is fizzy and fruity. I could suggest a Saison style beer with rose hips, hibiscus, and tart cherries giving the beer a slight red hue. Another could be a beer for a corporate retreat that may want a beer that is more straightforward that would appeal to a large group. I may suggest a version of our Kolsch where we could “spike” kegs with spices and/or fruits to make it more personal.Forming in 2020, the husband and wife team are seasoned professionals in their respective industries. Bryanne Busato has been in the wedding and events industry for nearly 10 years, managing 826 Weddings bridal shop in Chicago, IL and working with Perfect Petal floral designs as well as Sr. Sales Manager of Max \u0026amp; Livie furniture rentals in Denver to create beautiful, unique decor for weddings and special events. Bryanne has helped to build a start-up furniture rental company into one of the largest rental vendors in Colorado, boasting the largest selection of rental options in the state. Recently, working for Florista Spells Studio in Leadville, CO; an up and coming floral design shop, offering unique daily, wedding and event florals and decor.\u0026nbsp;\u0026nbsp;Complementary, Jacob Johnson has been a professional brewer since 2013 most notably at iconic Colorado brewery, Great Divide Brewing Company in downtown Denver, CO creating several local, regional, and national beer releases for the company. Jacob has taken the title of head brewer at Colorado’s first dedicated gluten-free brewery, Holidaily Brewing Company, managing and undertaking all of a brewery's day-to-day operations. While at Holidaily, he has helped the company expand from a 1200 sq. ft. space to a brand new 10,000 sq. ft. brewery helping to design layout, purchase equipment and build a new brewery from scratch. Recently, lead brewer at Breckenridge’s Colorado's Broken Compass Brewing, he is taking on the task of brewing in the high mountains creating award-winning beers for a local and tourist favorite brewery. Currently, Jacob is a brewery consultant, helping wavering and start-up breweries get off to the right start by making improvements in efficiency, lowering costs where possible, and reimagining recipes.\u0026nbsp;Our goal as the first custom brewery is to create a new kind of brewery experience that provides fresh craft beer to the local community, tourists, and have a contemporary space that showcases Seattle’s rich history and beauty. Simply, there is a void between the events and craft brewing industries that we hope to be filled with our services. As the industry has changed in 2020 with the world facing the changes and challenges of Covid-19, we have witnessed the weddings and event industry become more focused on smaller, intimate and more specialized events. We wish to fill a void in both the events and brewing fields to provide a unique combined service that features exclusive custom-made beverage offerings in a one-of-a-kind gorgeous future events space and taproom located in Seattle. Over the past several years, it has become popular amongst wedding parties to feature a signature cocktail from the bride and groom. We look to make something more personal, more intimate, creating a one-of-a-kind beer that can be served for the event and saved for future visits in our taproom.Washington has one of the largest craft beer markets in the US, ranked 4th with 437 total breweries and in 2017 Seattle-Tacoma metro area boasted 173, at the time this was the most of any metropolitan area. While it may appear to be a saturated market, often these clusters of breweries can create their own draw with the opportunity to brewery hop from one to another. With ample outdoor activities, world-class food and wine, and being located between two other major cities, Portland and Vancouver BC, Seattle, Washington is the ideal location for a first of its kind custom brewery.\u0026nbsp;Lark + Lore will be both a brewery-taproom and convertible events space for up to 150 people, we can cover all of the needs for our hosted guests, while also providing an ever changing line-up of craft beers for casual patrons to consume on days when events are not taking place.
